Tasting Notes:
This sparkling rosé presents a beautiful salmon-pink hue and fine mousse with persistent effervescence. The nose is marked by a vibrant fragrance of strawberry and peach, enhanced with subtle notes of crab apple and flinty minerality. Extended lees aging imparts toasty brioche and nutty autolysis notes, adding depth and complexity. The palate is full-bodied, with harmonious layers of fruitiness intertwined with delicate yeasty and nutty characteristics. The satin texture and long finish create a luxurious drinking experience. The New Dawn Rosé’s crispness and complexity make it a perfect companion to a wide range of dishes. Pair it with fresh seafood like oysters, shrimp, or scallops, as well as light poultry dishes such as roasted chicken. It also complements soft cheeses, like Brie or Camembert, and pairs beautifully with delicate appetizers such as smoked salmon or sushi. For dessert, enjoy it with berry tarts or a rich chocolate mousse. This wine is perfect for special occasions or as an elegant aperitif.
